This bounty is the kind that numbers talk themselves but just for fun I will explain a little. As you can see in the charts the daily gas fee which would be generated by Uniswap is about 8 to 10 times of the gas fee that Sushiswap cause. As we could see in the second table their average gas fee is very close (about 3 present difference ) so the factor which make the difference is just number for transaction. So in a simple conclusion we could say the number of transaction which happened via UNI is 8 to 10 times of that number in SUSHI.
